Chef LaLa's Oatmeal Cookies
What I Hate About Me's self-proclaimed sugar addict Brandi learned how to get a handle on her sweet tooth with these amazing low-sugar cookies by Chef LaLa.
1 C whole wheat flour
1 C oats
1/2 tsp ground cinnamon
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp baking soda
1/2 C extra virgin olive oil
1/2 C baking sugar blend
1 egg
3 Tbsp milk (2%)
1 tsp vanilla
1/2 C raisins, dried cranberries, or semisweet chocolate chips
Preheat oven to 350°F. In a large bowl, combine flour, oats, cinnamon, salt, baking powder and baking soda. Add oil, sugar blend, egg, milk, vanilla and raisins. Stir thoroughly until all ingredients are combined. Line a cookie sheet with aluminum foil and lightly coat with nonstick cooking spray. Shape 1 tsp of dough into a ball. Place balls 2 inches apart on cookie sheet and bake for 15 minutes. Cool for 10 minutes and serve.
